Recipe: Mashed Potato Pancakes


If you're not sure what to do with your leftover mashed potatoes after Thanksgiving dinner, I've got just the thing.  Give your mashed potatoes a very simple and delicious second life.

Ingredients:

2 cups leftover mashed potatoes from Thanksgiving dinner

1 tbs. of Cajun Deviled Egg Seasoning

1 cup of sharp cheddar cheese

Flour for dredging the potato pancakes 

2 tbs. of butter

1 tbs. of olive oil
